The Agency of Agriculture meat inspection laboratory provides services to the Agency's Meat Inspection Section, consumers and the meat industry. The laboratory's legal mandate is to ensure that meat and meat products are wholesome and unadulterated as well as in compliance with State and Federal regulations.

The laboratory also receives samples from companies producing beef jerky in the state of Vermont. Samples are commonly tested for protein, moisture and salt. Occasionally, additional chemical testing may be requested.
